labor intensive cupcake making 101

Make a batch of cupcakes, while those are baking mix up the colored sugars. I used plain white refined sugar and food coloring, tint to the desired color and set aside. Whip up a batch of frosting, or in my case crack open a tub of frosting, select an unsuspecting cupcake and glob on the frosting. Pile it on thick enough to be able to push things into....
Open up the bag of miniature marshmallows and cut in half diagonally.

Hand dip each half of the marshmallow in colored sugar. The sugar will only stick to the cut side, forming what looks like a petal.
Place hand dipped marshmallows in concentric circles around the top of the frosted cupcake, starting with the outside edge first.
Start placing them angled slightly more up towards the center to give an open blossom look. Continuing to place the cut side up marshmallows in circles toward the center until about all of the top is covered, leaving a tiny opening at the top for a slight sprinkling of an alternately colored bit of sugar to serve as the blossoms center. Please note that your cupcakes should have between 36-48 - 1/2 marshmallows pieces placed on the top depending on the size of your cupcakes.
Repeat until all cupcakes are covered or until your head explodes or your eyes start bleeding...

A friend of mine recently told me I was "Martha Stewart in cowboy boots." I giggled. I think things like this is why she said that.... ;-)

busy bakers

Faith and Andrew have been some very busy little bakers lately. Faith made this delicious quiche' the other night for dinner, actually she made two! Guess what we had for lunch the next day?

Andrew wanted to get in on the action and decided he'd try his hand at a pumpkin pie. This was his first one and Ron said, "Andrew did a pretty damn good job on this pie!" I'm so happy my children enjoy cooking.

Coconut 'Cameroons'

What to take to tomorrows Stitch n' Bitch......humm?? I know, I'll whip up a batch of Macaroons, or cameroons as Andrew calls them. (Give him a break, his mothers named 'Twistie' ... that should explain some of it!) Macaroons make me laugh, all my life I'd avoided them, simply because of the name; I couldn't get past it. Last year I had an uncontrollable craving for coconut, so I bit the bullet and made a batch. Much to my surprise I loved them and realized that it was a good thing that I hadn't eaten them all my life as I'd weigh a ton by now!

Can you see the orange-yellow of that egg yolk? That's what they are supposed to look like! Now that's fresh!
I added slightly too much vanilla I think, fortunately it doesn't effect the stiffly beaten whites, the brown vanilla faded, much to my relief!

Added coconut, tried really hard to stay out of it....

Andrew always like to 'Kick it up a notch!" yes, he's a huge Emeril fan. So I melted some chocolate....

Finished product! Out of this world delicious and as light as air!

Sometimes a girl just needs some CHOCOLATE!!!!

These chocolate cookies are SO good I can't stand it. Yesterday, for reasons I won't get into I needed some chocolate. I could argue that I needed it like I needed a hole in the head but hey at least I'm honest. After dinner I decided that I'd bake a double batch of chocolate cookies; that way they'd last a bit longer. I'll admit I'm not much of a cook, but I do enjoy baking occasionally. Maybe that's why a career in Pampered Chef was not for me, though I love the baking stones!

Finished product, and they go great with a cup of Chai tea for breakfast too!
